Fix out-of-order choice letters: relabel A,B,C after shuffle

Choices were shuffled for display variety but kept their original dataset letters, so they rendered out of sequence (e.g. B,E,D,A,C). Re-letter them sequentially by display position and remap the stored correct-answer letter to the relabeled correct choice so grading stays correct.
