test(hooks): drop a duplicate rotation test, cover temp sweep and uninstall after reclaim

TestInstallGitHook_KeepsBothBackupAndNewForeignHook already asserts rotation end to end. Add the two uncovered paths: an interrupted install's leftover temp copy is swept, and uninstalling right after a reclaim keeps the user's hook in .legacy and removes Entire's keep copy.
