checkpoint: collapse persistent reads to generic Read/List

Rename the committed read methods to the generic surface differentiated by return type: (PersistentStore).ReadCommitted -> Read (returns *CheckpointSummary) (PersistentStore).ListCommitted -> List ReadCommittedCheckpoint (helper) -> ReadCheckpoint

Sets up sto.Persistent.Read(...) once the facade is reshaped. No behavior change.
