hooks: keep a hook aside instead of overwriting it in pre-commit migration state

When pre-commit keeps Entire's previous hook as <hook>.legacy, rotation is skipped so pre-commit's wrapper never becomes the chained backup. The hook at the path was still overwritten without a copy. Keep it aside as <hook>.pre-entire.<timestamp> instead, so no hook is overwritten without a backup; the backup that runs is unchanged.
